Happy Tuesday my Healthy Living Friends! We sure are having some great weather here in Pennsylvania! This week the temps are around the 50′s in the morning and 70′s in the afternoon Every year around this time, I find as the weather warms up, my appetite goes down. My body really starts to look for meals that are light and breezy and rich in lots of raw fruits and veggies. This was my mission for tonights dinner. So here it is…
Blueberries and Greens Salad
1 head lettuce – shred/chop (I used green leaf lettuce)
2 cucumbers – diced
1 avocado – cubed
1 cup – fresh blueberries
2 cups – beans (I used mixed beans)
1/2 – 1 red pepper – cut in strips
1/2 – 1 orange pepper – cut in strips
1 cup – tomatoes (I used bite sized)
1/2 large red onion – diced
1-2 cups black olives
Simple Citrus Cilantro Dressing
I was in the mood for a very simple/plain citrus cilantro dressing. Feel free to jazz it up more and be creative. (Some other interesting items to add would be a chunk of avocado, sun dried tomatoes, other herbs etc.)
Juice of 1 orange
Juice of 2 limes
1/2-3/4 cup olive oil
1/8 cup fresh cilantro (use more for a heavier cilantro taste)
fresh ground pepper
In a blender add all ingredients except for the olive oil. Blend well. Slowly drizzle in the olive oil.
Add dressing to salad above.
Some Ingredient Benefits: Blueberries are super rich in antioxidants such as vitamin C and anthocyanins. They are low in sugar and are a great food that supports the eyes, brain and cardio system!
Cilantro is nature’s chelator, it aids in digestion, it’s rich in phytonutrients and it is a good source of magnesium and iron!
