Happy Wednesday, Healthy Living Friends! Last night I was playing with my new food processor and testing out all of the different features and decided to try this very simple and basic salad dressing recipe to go with our giant dinner salad. Enjoy!

Basil Avocado Lime Dressing
Ingredients:
1/2 medium – large avocado
1/4 cup or so of filtered water
1/2 cup olive oil
5 fresh basil leaves
Juice of one lime
sea salt to taste
fresh cracked black pepper
Procedure:
Add all ingredients except the olive oil into a food processor or high speed blender. Start to blend slowly and then drizzle in the olive oil. Taste and adjust seasonings.
Serve over Greens:
4-6 cups fresh mixed salad greens
2 cucumbers, cut into half moons
4 shredded carrots
1 thinly sliced small-medium red onion
1 cubed apple or pear
1/2 avocado, cubed
1-2 tomatoes, cut into chunks
green or black olives
2 cups cooked beans, optional
Toss all salad ingredients in a large bowl and top with the above dressing! Enjoy!
