I am so grateful for my local health food store! They always seem to be on the look-out for the newest of products! The other day, I came across a product in the pasta aisle that caught my attention…gluten free pasta made out of beans! For those that are gluten and grain free and can tolerate beans, there is a new line (at least new to me) that makes spaghetti out of black beans and fettucini out of mungbeans.  The product is labeled as organic and gluten free and only contains the mentioned beans and water in its ingredient list.  So just imagine all of the ways you can prepare this as a main entrée or a wonderful side dish.  I am thinking that the family would enjoy the mungbean  fettucini  with a non-dairy pesto and the black bean spaghetti  in a coconut curry sauce with veggies in the near future :-D!  The product is protein rich and a little goes a long way! You will, likely, not be able to overdo it as it is extremely filling with a only a small portion size. I prepared the black bean spaghetti  (in plain ole garlic and oil) for the first time the other night and served it as a side for the family with lots of broccoli rabe and baked chicken thighs.  It is also great as a leftover for lunch the next day!  Enjoy!

Black Bean Pasta with Broccoli Rabe and Baked Chicken

1 package black bean spaghetti, cooked

1 bulb or two of garlic, chopped

olive oil

sea salt

red chili flakes

Cook the black bean spaghetti as directed on the package.  While the pasta is cooking, add some olive oil (about 1/4 cup or so) and garlic to a saucepan and saute until the garlic is tender being careful not to burn. (Optional: add some fresh chopped parsley to the garlic and oil while sauteeing) Once the pasta is cooked, drain and toss with sauteed garlic/oil mixture. Season to taste with sea salt and red chili flakes.

Note:  Many that are gluten sensitive do not do well with beans. Even though it is grain free, beans can be very harsh on the digestive system… so if beans bother you, you may want to avoid bean products altogether.  Also, I have contacted one of the distributors to see if they can find out whether or not the product will become certified gluten free (as the product currently states gluten free [the product is Certified Organic by IMO Switzerland]) at any time in the future. I have also emailed them asking them if the product is manufactured in a dedicated gluten/grain free facility.  As soon as I hear back, I will update this post.

What is the brand name of the black bean pasta? Both my husband and I are gluten free, and currently my husband is on an elimination diet and can have no grains except tapioca. We live in an area with very limited access to healthy alternative foods. Pasta is his very favorite food, and I finally found a really good rice pasta (Jovial brand) but now he can’t even have rice for at least 4 months!
