This past holiday weekend, my older daughter and I had a blast in the kitchen! I saved a bunch of recipes that I had found online and was very eager to try. I cannot say enough about the recipes below…they were all AMAZING!
Recipe #1 Paleo Pancakes (A BIG thank you to the Paleo Mom for all of her fantastic recipes and information!) I have to say…I have tried several Paleo Pancake recipes and they were good (most were made with almond flour or coconut flour) but, in my humble opinion, not nearly as good as these! When I looked at the list of ingredients I was not sure how it was going to turn out but I am so glad I gave them a try. They are now a new family favorite!
Recipe #2 Cauliflower Crust Pizza I was pleasantly surprised with this recipe. I did switch it up a bit by omitting the goat cheese and substituting it with this cheese. I must say, it worked beautifully. You want to make sure that you keep the crust in the oven until it is nice and golden and be sure to squeeze all of that excess water out of the cauliflower. I topped the pizza with sauteed broccoli rabe, freshly grilled zucchini, a few cloves of pressed garlic and a sprinkle of olive oil, oregano, sea salt and this shredded mozzarella.
Recipe #3 Dark Chocolate and Coconut Dessert! Is there anything in life better than that ?! If you are a dark chocolate and coconut fan you will flip over these bars! (You may even be tempted to do cartwheels!) A BIG thank you to Adriana at Living Healthy with Chocolate for an amazing recipe! The only thing that I did different is melt about a 1/4 cup more dark chocolate (Total 1 1/4 cups) I used a combination of this and that chocolate.
