Recently, I had been surfing the internet for a grain free/nut free flat bread recipe, to eat every now and again, and I came across a sweet recipe on this awesome website. I whipped up the recipe over the weekend and I must say it was so nice to be able to eat an egg sandwich between two pieces of grain free “bread”. I made the recipe using sweet potato, but I am eager to try it with plantains next time around! Enjoy!

Tip: Don’t forget…if you want fluffy scrambled eggs, add a splash of filtered water to your eggs, not milk 😀
