If you have been living a grain-free life or following the AIP way of life you know that breakfast, at times, can be challenging (especially when you are in a hurry). If you haven’t tried it as of yet, pick yourself up a bag of some sliced tiger nuts! I am looking forward to coming up with various recipes using this wonderful tuber! For now, try giving this a go 🙂
- Place sliced tiger nuts and shredded coconut in a bowl.
- Pour pure coconut milk over the mixture and let sit and soak for a bit.
- Add in diced apples.
- Add in a pinch of ceylon cinnamon.
- Mix well.
