Watercress seems to be one of those super foods that slips under the radar. With so many health providing benefits, this is one food you will want to incorporate into your diet on a regular basis. Last week I was at an organic market and picked up two fresh, gorgeous bunches of watercress. I made a simple, yet very yummy salad and served it with some poached wild salmon. I hope you enjoy it!
2 bunches of watercress, wash well and run through a salad spinner
1 large cucumber, cut into slices – to make the cucumbers look like decorative flowers, run your fork down the cucumber from top to bottom
handful or two of good quality sundried tomatoes, julienned
1 small red onion, minced
Fresh ground black pepper or pepper blend
lemon infused olive oil or basil infused olive oil (or just fresh lemon and olive oil)
Toss all ingredients into a bowl and mix well. Top with seasonings to taste and olive oil/fresh lemon. Enjoy!
